Don't know if you got an answer to your question yet or now, I just came
back off vacation.

From the power source will have two hot wires and a neutral wire.  On
the water heater, the two hot wires connect to its two wires.  The
neutral wire grounds to the equipment.  If I were wiring this, I would
actually check to verify that your three power wires are indeed 120 volt
lines to ground that make 240 with each other.  You could have just a
standard hot, ground, and grounded wire there.  If this has been
explained unclear, just ask and I will give a thorough answer.
